Grilled Asparagus Wrapped in Prosciutto
Ingredients 
 
2 pounds of fresh asparagus spears, washed, snap off woody ends

 1/2 pound thinly sliced prosciutto*
 2 lemons, zested and cut in half
 Extra virgin olive oil
 Freshly ground black pepper
 6 bamboo skewers, soaked in water for 30 minutes
 Optional garlic and cheese
 

Cooking Instructions

Lay out the procuitto slices, add cheese and garlic if using.  Then  place an asparagus spear.  When finished, run a skewer through the  spears, one at the top and one at the bottom.  This prevents the  procuitto from unwrapping and makes it easier to turn the spears on the  grill.  Drizzle or spray olive oil over the skewered asparagus.  Freshly  grind pepper over the spears.  I like using roasted garlic olive oil.  When your grill is hot proceed to grill these tasty spears.  Place lemons cut side down on top of the grill and lightly grill.   Cook asparagus until tender and prosciutto crisps, about 3-5  minutes per side. Cook lemon halves until lightly browned, about 2-3  minutes.   Remove asparagus from the grill when cooked and squeeze with lemon juice and top with lemon zest. This makes a wonderful appetizer or side dish.
